Learning How to Use Mexican Spices

Tuesday, March 9th, 2010

The herbs and spices used in Mexican cuisine are what truly give you the Mexican flavor you are craving. Without these spices, Mexican food would be bland. These herbs and spices bring out the goodness that we have come to expect from Mexican cuisine. If you truly want to make Mexican food, it pays to know about the spices.

Chile powder is the most well known spice used in Mexican cuisine. It is a mixture of many different types of chilies. Chipotle is made from smoked dried jalapeno peppers. Ancho, in comparison, has a fruity, sweet flavor. Many chili powders that you purchase at the grocery store are a combination of chilies, oregano, salt, coriander, garlic, and cumin.

Epazote is an herb that you can grow in your garden. Some call it Mexican tea. This herb is traditionally used in bean dishes to not only add flavor but to help digestive upsets that beans can cause. A few leaves are added while the beans are cooking. Be careful when you use epazote because it is very potent. Large quantities of this herb can be toxic.

If you need a distinctive flavor or a yellow coloring to a dish, use annatto seeds. They are often added to sauces and rice dishes. The seeds are soaked for at least an hour in water before use. The water can also be used in cooking. The crushed seeds are often used in marinades.

Cilantro is a popular herb that resembles flat leaf parsley. They are actually the leaves produced by the coriander plant. This herb is always used fresh. The flavor is tangy with a pungent quality that really makes a dish sing. It adds a nice bright note to rice, moles, salsas, beans, soups and stews.

Cumin is a spice made from the seeds of the cumin plant. They can be used whole or ground into a powder. Cumin is often used in conjunction with chile powder to create a balance in flavor. It is often used in soups, stews and other common dishes. Azafran is known as Mexican saffron, or safflower. This spice is used in very small amounts because it can be bitter. It causes the dish to develop a beautiful saffron like color and is often used in rice and seafood dishes.

If you study authentic Mexican food recipes you will see these spices used frequently, along with others such as thyme and oregano. In Mexico, they have a unique type of oregano that is earthier in flavor than Italian oregano. You can find this Mexican oregano in some herb catalogs. Unless you live in an area with a large Mexican population, it may be difficult to find it in local nurseries or grocery stores.

Familiarize yourself with the flavors of Mexico by studying the herbs and spices they commonly use in their cooking. You cannot get an authentic flavor without them. Make the most of your Mexican recipes by learning how to use these spices correctly. Your recipes will turn out much better once you understand the nuances of these seasonings.

Recipe For Potato Flapjacks

Tuesday, March 9th, 2010

Thanksgiving is over and your refrigerator is loaded with leftovers. In addition to all that turkey, you still have mounds of mashed potatoes taking up space. The last thing you want is for them to go uneaten and turn bad. So what you need is a potato pancake recipe that will help use up those leftover potatoes.

Plopping leftover mashed potatoes on peoples plates for the next three days might be met with groans, if not a downright mutiny. Well how about transforming those spuds into a treat that is easy to prepare and will sure to be a hit with your friends and family? In fact, you just might end up discovering that you wished you had more leftover potatoes to keep up with demand.

To start the ball rolling, be sure you have on hand all of the necessary ingredients. You will need vegetable oil (canola, corn or a blend works just fine), salt and pepper to taste, flour, an egg, milk, onion, and of course, those mashed potatoes. For a different taste, you can substitute bacon drippings for the vegetable oil.

To yield 4 pancakes, you will use 2 cups of your mashed potatoes. Combine them with 1/2 cup of flour, 1/4 cup of milk and 3 tablespoons of diced onion. Depending on how your family feels about onion flavor in their food, more can be used. Thoroughly mix all this together and then form it into 4 patties. Forming them on tin oil or wax paper may make it easier since the mixture may be sticky.

Coat a hot (but not smoking) frying pan or electric skillet with vegetable oil or bacon drippings. Fry each patty for 3 minutes on each side, pressing down on them occasionally with a spatula. To prevent the spatula from sticking, first spay it with a cooking spray. Pancakes are ready when they turn a golden brown. Make sure the insides are hot and that the onions are tender.

Try getting creative if you like, by adding to the mixture bacon pieces, shredded cheese or anything else you think your family will like. Sprinkle them with a little salt and pepper to taste and serve. You can also top them off with additional things like sour cream, butter, gravy, melted cheese, hot sauce or ketchup. These side dishes are good compliments to chicken, pork beef or fish. Or they also make tasty appetizers.

This is the traditional American style potato pancake recipe. To spice things up, you can also try the German style potato hotcakes which use grated potatoes instead of mashed. These are crispier and more similar to hash browns.

Find lots and lots of recipes like this recipe for potato pancakes on Andrews pancake website. If you like you pancakes salty you can also try ham and cheese pancake recipe. It’s delicious and none of the recipes are hard to make!

Coconuts: An Amazing Health Food

Tuesday, March 9th, 2010

Coconuts are a bountiful gift to this planet. In Sanskrit (the mother language of India), the coconut palm is known as ‘kalpa vriksha’, meaning ‘ the tree that supplies all that is needed to live.’ An ancient plant that is distantly related to grasses, the coconut has been used as a food and medicine since the dawn of history. Ayurveda (the art of science and medicine that has its roots in India) has long advocated the therapeutic, medicinal and cosmetic properties of coconuts.

Taking almost nine months to filter each liter of water in its shell, the coconut is an amazing natural water filter. The water is pulled up through micro-fibers which purify it before it ends in the actual nut of the coconut. This clear life-giving fluid isone of the highest sources of electrolytes found in all of nature. Coconut water is a great re-hydrator and makes an ideal sports drink. When we consume a drink consisting of 55% fresh coconut water and 45% fresh green-leaf juice, or blue-green algaes, we create for ourselves an instantaneous infusion of life energy.

A completely saturated medium-chain fatty acid (remember: not all saturated fats are bad!), coconut oil contains no cholesterol and does not form dangerous trans-fatty acids. The medium-chain fatty acids (MCT’s) in coconut oil possess incredible health giving benefits requiring less energy and fewer enzymes to digest, allowing the body to quickly convert the MCT’s into usable energy. Even better than olive oil for lowering overall cholesterol levels, coconut oil is stable at high temperatures (up to 170 degrees Fahrenheit), making it an excellent choice for use in cooking.

Coconut oil is one of nature’s most versatile and health-enhancing fats. Studies show that coconut oil supports the health of the thyroid gland, which regulates thenecessary anti-aging steroids progesterone, DHEA and pregnenolone. These steroids are required to help prevent heart disease, senility, obesity, cancer and other degenerative diseases associated with aging. Coconut oil also contains capryllic acid as well as lauric acid, both of which are anti-fungal, anti-viral and anti-microbial. It has long been known that caprilyc acid is the most potent yeast-fighting substance, making it an excellent choice for those working with releasing candida and other inner ecology imbalances. Transitioning to coconut oil as one’s fat source also helps to normalize blood sugar levels while increasing energy, building a healthy immune and nervous system and reducing the overall stress on one’s body. It is necessary to note that a ‘therapeutic dose’ of coconut oil consists of daily doses of two to three (or more) tablespoons for an adult.

Cooking with coconut oil is a delightful way to introduce this supplement into your life. Try using it instead of margarine, butter or other vegetable oils. Also, consider using fresh coconuts that are not too old (i.e., forgo the coconut shavings and buy a whole coconut instead). The flesh is primarily fat, and it can be chopped and eaten with fruit for a delectable treat. Coconut oil is also great as an oil for veggies, tossed into your morning smoothie or slathered on bread with spices or preserves. If you’re looking for a way to enhance oats or rice, coconut oil adds a special note to a normally humble dish.

Coconut’s reputation as a skin nutrient is well-documented, and people with many skin types can benefit from its moisture-giving qualities. In aromatherapy, both virgin and fractionated coconut oils are used. A way to see the difference is to remember that virgin coconut oil looks more like coconut flesh. It is a solid fat that is used in both cooking and body care, and it can be mixed with aromatic oils. While it is certainly a dense oil, virgin coconut oil doesn’t leave the skin feeling too oily, as it is absorbed rapidly. Fractionated coconut has similar qualities, but it is made by physically reducing the size of the fat molecule, removing the section of the molecule that makes it a solid. This creates a liquid oil that has no odor, lasts a long time (its molecular structure makes it “fully saturated,” meaning it has no atomic space for oxygen to attach, thereby deteriorating the oil) and is quickly consumed by the skin. Sometimes coconut is mixed with other oils, like jojoba, resulting in a nutrient-rich cream. With so many coconut oils to choose from, mixing coconut with aromatic oils is a simple way to add to your health and beauty regimen.

One more thing about the fabulous coconut: this oil is great for use in sexual play. Both the taste and smell of coconut add to the delights of intercourse. A great way to experience coconut is by mixing it with vanilla and cacao oils. Smooth this concoction over your lover’s skin and enjoy.

In terms of versatility, the coconut is a marvel of nature and a perfect oil to work with in aromatherapy and nutritional healing. It can be used in body work, cooking and skin care, and its radiance is highlighted when complemented with essential oils. Use it in any form and expect results – the coconut has long been our friend, and its beneficial qualities continue to be discovered and cherished the world over.
